Bon Appétit Brings a Fresh Approach to APU Dining

Choosing what to eat can often seem like an uphill battle full of compromises between what tastes good, what’s good for your body, and what’s good for your wallet. Beginning this fall, the Azusa Pacific University community will enjoy a fresh approach to dining on campus, featuring locally sourced, healthy, and delicious food at an exceptional value, crafted by new dining services partner Bon Appétit.

“It’s really simple. We use the best ingredients to create a local and seasonal artisanal style cuisine,” said executive chef Anastacio Rodriguez. “We cook from scratch. We’ll get large primal cuts of meat and break them down by hand. We don’t use processed vegetables, or any bases or mixes. We make our own stocks. When students taste our food, they’re going to want to eat here.”

On August 8, Bon Appétit hosted an open house for APU faculty and staff to sample a variety of dishes from the catering menu. cauliflower that makes you actually want to eat cauliflower, and a quinoa wild rice pilaf that tasted good enough to seem bad for you, even though it’s packed with nutrients. Attendees also munched on an array of colorful and crisp vegetable crudites with two types of house made hummus and ranch dips. Then guests made their way to the dessert table to indulge in a platter of french pastries including chocolate-raspberry tarts, opera tarts, chocolate ganache, and white-chocolate lemon mousse.

Bon Appétit champions a sustainable focus for food service, produced through practices that respect farmers, workers, and animals; nourish the community; and replenish shared natural resources for future generations. “Bon Appétit purchases from local farmers,” Rodriguez said. “At APU, we’ll be using Mariposa Ranch for our beef, Mary’s Free Range Chicken, Bread Artisan for most of our breads, and VR Green Farms for a lot of the produce.”

That attention to quality and detail extends to the Bon Appétit chefs who complete extensive training on not only culinary techniques but also on food allergies, a topic of increasing significance on college campuses. “We make sure our teams are well trained and knowledgeable about special diets and food allergens. They are all FARE certified. It’s always an awareness point within our kitchens so people understand how they’re preparing food, how to reduce and prevent cross contact in the kitchen,” said Terri Brownlee, Bon Appétit’s director of nutrition and wellness. “In addition, we use descriptive menuing to make sure students know exactly what goes into each dish.”

Recognizing the growing number of students with allergies, the university provides an on-campus dietician to tailor a plan specific to each individual. “We encourage students to utilize their dietician not only for problem solving, but also as a resource of information,” Brownlee said.

Bon Appétit promises to enhance the dining experience at APU while maintaining existing pricing. According to Sam Samaan, executive director of University Services, dining plans and items at dining venues will not increase in cost this year. Samman encourages students to choose a plan that best fits their needs. “It’s all about convenience. You don’t have to worry about the time it takes to cook or shop,” Samaan said. “Instead, you can use that time to focus on your academic success.”

If you want to become an industry leader, you need to be trained by an industry leader. That’s why, as you’re looking at colleges, it’s wise to take special note of whether the school is involved in significant research.

What Is a Research University?

The Carnegie Classification of Institutions of Higher Education has become the most influential way to recognize a university’s commitment to research. The organization classifies doctoral/research universities in three ways:

  1. R1 universities have “very high research activity.” These universities expect professors to be primarily involved in research. Accordingly, graduate students or adjunct professors tend to teach undergraduates.
  2. R2 universities have “high research activity,” but they still expect professors to be teachers first. Most courses are taught by professors who are involved in research (and may even involve their students in the work as well).
  3. Universities that fall into the third group, the Doctoral/Professional Universities category, have research activity but don’t meet the qualifications to be designated “research universities.”

Why APU’s R2 Designation Matters for Incoming Students

Recently, the Carnegie Classification of Institutions of Higher Education awarded Azusa Pacific University with an R2 designation. This is a major accomplishment that the university had long been working toward.

“The R2 designation is a real middle ground,” said Stacy Kula, PhD, an assistant professor in the Department of Educational Leadership at APU. “We have higher research activity, but the primary focus of our faculty is still on students and on teaching.”

Kula explained that the designation means students are getting significant interaction with their professors, many of whom are highly active in their fields and have a high level of expertise. She also noted that many students—including undergraduates and graduates—get to work on research projects with professors, providing hands-on experience in topics that matter in their chosen fields.

The R2 designation comes as APU celebrates its 25th anniversary of offering doctoral degrees. Kula said she believes the designation is a natural result of the university’s focus on research. “There has been an increased expectation that everyone is going to be involved in some type of scholarship, even if they don’t publish,” she noted. “They need to be involved in their field.”

My Life in Christ: Hannah Gibson’s Faith Story

For the first 14 years of her life, Hannah Gibson ’22 was not allowed to celebrate Christmas. In fact, her parents prohibited anything related to religion—namely Christianity—and refused to mention Jesus in their household. When her parents abandoned her as a teen and left her without a place to stay, Gibson turned to the kindness of one of her high school teachers, an APU alumnus. He opened his family’s house to her, under one condition: she would go to church with them on Sundays. She went, and an overwhelming wave of understanding flooded Gibson’s mind. Jesus offers forgiveness, boundless grace, and freedom from condemnation. She wanted to know more and quickly developed a dream of attending APU.

The financial realities of her life, however, made that path seem impossible. This realization drove Gibson to surrender her dreams to Jesus: she would go wherever He took her. As she let go, God spoke, telling her to write her story and send it to the admissions representative. Struck by her life journey, APU partnered with Gibson to make her education possible. She arrived on campus that fall, blown away by God’s provision and eager to experience more of Him.

Since coming to APU, Gibson has cultivated her love for developing community and teaching others, whether serving as a resident advisor (RA) to leading an action team in East Asia. “All my experiences grew me, but God stretched my faith for the first time during RA training while backpacking in the wilderness,” said Gibson. “I realized the impact of my life story, learned from the ministry of others, and grew closer to Jesus.”

Forensic Accounting Careers Are Far from Ordinary

If you think the only profession an accounting degree can lead to is becoming an accountant, you’re in for a surprise! While you may have heard that you need to be a math whiz to succeed as an accounting major, this is a myth. Accounting is not math. If you can add, subtract, divide and multiply, you are on your way to a rewarding career in accounting.

“People say ‘I don’t like math,’ but accounting is not math,” said Ken Kederian, director of the accounting program at Azusa Pacific University. In addition to equipping students with versatile skills, an accounting degree can open the door to exciting jobs—like forensic accounting careers.

What Is Forensic Accounting?

Kederian explained that forensic accounting is the process of investigating fraud or embezzlement. “Basically we are building a case to exonerate someone; that’s why we exist,” he said.

Fraud is a huge problem that costs businesses billions of dollars each year, according to the Association of Certified Fraud Examiners (ACFE). It penetrates every career field and every business.

“Anyone can send numbers, but someone needs to verify these numbers,” said Kederian, who has served at the top of the auditing teams for large corporations like PricewaterhouseCoopers, Ernst & Young, GM, Avery, and Public Storage. He shared that warranty fraud is a common problem for car dealerships, and an internal auditor not only saves the company a lot of money, they also protect and save the customer money.

Pursuing a Degree in Forensic Accounting

Whether the FBI is on your career goal list or you wish to work in a company’s internal auditing department, it all starts with a Bachelor of Science in Accounting. The curriculum offered at Azusa Pacific University can effectively prepare you for an accounting career, and upon graduation, you can also choose to go on and complete a one-year Master of Professional Accountancy (MAcc) degree.

The graduate accounting program incorporates a Certified Public Accountant (CPA) firm internship and CPA review course, helping students further hone their skills and gain practical experience in the field. To date, 100 percent of APU’s MAcc graduates have received job and internship offers prior to graduation.

Once you pass the CPA exam, you can start working in the forensics department at a public accounting firm. Once you’ve logged two years of work experience related to fraud investigation, you are able to take the Certified Fraud Examiner exam, according to the ACFE. Game Changer Tyler Endres ’10 Shapes Esports Culture

A long line of people wraps around an antiquated brick building in a nondescript area of downtown Santa Ana. The crowd anxiously awaits entrance, hoping to secure a front row seat to all the action. Inside, the atmosphere is electrifying and the spirit of competition palpable. Amid the cheers of hundreds of fans gathered around large computer screens, gamers of all levels battle it out. This is the burgeoning world of esports, and in just four years, Tyler Endres ’10, has capitalized on this international phenomenon by building a successful brand with his business Esports Arena expanding its reach and influence across the nation.

The early imaginings for Esports Arena began with Endres and his roommate Paul Ward ’10 while they were students at Azusa Pacific University. “During my freshman year, we loved playing Halo II. Everybody at APU played it back then. We would leave our dorm room in Trinity Hall open so people could come and play with us,” Endres said. “Soon, our RD asked us if we could host a Halo II tournament. We borrowed Xboxes and TV’s and had 16 four-person teams. It was awesome and we ended up winning.” Endres and Ward hosted the same tournament the following year. Unfortunately, their reputation preceded them. “We were too good and nobody wanted to play with us,” he said.

While he wasn’t quite at the professional gamer level, Endres was much better than the average player. He envisioned a place where he could compete with other players at a similar skill level so they could keep improving. “That’s how we came up with this idea of opening a facility where people can come out and play competitively every night of the week,” he said. After Endres graduated, a job in restaurant equipment sales provided a means to an end. He saved up for three years before launching Esports Arena in Santa Ana. “We were really lucky to find this building. The owner loved the concept so much that he paid for all the renovations, which were quite extensive. We couldn’t have afforded them without him, so that was a Godsend,” he said. Renovations took more than two years to complete. By the time the arena opened in September 2015, Endres was down to his last penny. “I paid my rent check and if we didn’t open then, I couldn’t have paid rent the next month,” he said. “Then we opened and received some investments that relieved the financial burden.”

In the following months, a number of large gaming corporations rented out Esports Arena. Business was booming, but it was not what Endres had envisioned when he started the company. “We had so much success doing these events that we only chased events for a while. We had to ask ourselves what do we stand for, what message do we wish to communicate,” Endres said. “Our core product now is gaming for everybody. We want to develop a grassroots gaming community where people can compete at any level.”

It is this sense of community that inspires Endres. “When I look back to my time at APU, that’s what helped me the most. APU enables students to find community and feel like they belong,” he said. “Our community was gaming. I started this company because we had so many good friendships that came about through gaming and our love for it.”

The rapid success of Esports Arena spurred opportunities for business growth, including opening facilities inside the Luxor® Casino in Las Vegas and in Oakland, California.

Part of the new business model is a partnership with the largest retailer in the world, Walmart. The company came to Endres in early 2018 with the idea of putting mini Esports Arenas inside their stores. “Walmart owns a 30 percent market share in video game consoles, but the market is declining because you can just download most games at home. They were losing a huge chunk of the market and saw us as a potential solution,” he said. So far, Esports Arena is in five Walmarts across the country. Endres said the company plans to expand into many more stores in the coming months. “This allows Esports Arena to create its own ecosystem of esports with competitive players from around the country,” Endres said. “That’s what I’ve always wanted to build.”

In addition, Esports Arena launched a series of gaming computers called OverPowered, available at Walmart. “They’re phenomenal machines. The equipment inside is really high quality and they’re available for a great price,” he said. “Knowing my brand is in the household of gamers across America is a really cool feeling.”

Even with the growth of his brand, on most days, Endres can still be found at the place where his success began, the original facility in Santa Ana. “We keep busy around here. We partner with a lot of professional gamers and influencers like Ninja, Dr. Disrespect, and even Cobi Jones.” The facility has a live broadcast center where thousands of people stream the esports action. During big events, Endres said everyone is running around chaotically, but they all love it. “It’s an absolute blast. I hope I get to do this for the rest of my life.”

After just four years, Endres’ company has expanded across the country and he now employs 72 people. “I need to constantly remind myself what it’s all for. With all the changes, it’s tough to keep it in perspective,” he said. “I work for everybody who works for me. I’m only able to do what I do because of all these people God has brought into my life. It’s definitely not all me. I thank God for that.”

“We find that in certain instances, such as pain, the regions of the brain that are activated are the same regions activated when we have sadness, fear, and happiness,” said Derrick Sueki, PT, DPT, PhD, director of the Doctor of Physical Therapy program at Azusa Pacific University. “These types of discoveries have pushed us in the direction of thinking that pain is a form of emotional response.”

Sueki elaborated that early research is also exploring the connection between spirituality and emotion. “We are beginning to study the brain responses to prayer and spirituality,” he said. “We are starting to see that these may also link to the emotional regions of the brain.”

These discoveries are incredibly important for physical therapists to understand. Sueki noted that prior to these findings, the practice of physical therapy solely focused on the physical aspect of the injury and recovery. We now know it’s important to not only rehabilitate the body, but to also emphasize mental and spiritual health!

College Counseling Services: A Critical Component of Student Success

It takes more than just academic preparation and great study skills to succeed at school. You can’t make your mark in college without taking care of your mental health. This is exactly why many schools provide college counseling services.

Finding Support on Campus

Thankfully, students aren’t just recognizing the symptoms—they’re getting help for their struggles. Between 2009 and 2015, the number of students visiting college counseling centers climbed by 30 percent on average, according to the Center for Collegiate Mental Health. Of all the issues students were dealing with, the American College Health Association reported anxiety, depression, and relationship problems were among the most common.

Experts in the counseling field suggested that the uptick in students visiting counseling centers should be seen in a positive light. While it’s possible (and maybe even probable) that student mental health challenges have grown in the last few decades, the fact that more students are seeking out the help they need is a great thing. This means students are more aware of these needs and there is less of a stigma around people getting the help they deserve.

In recent years, schools across the country have expanded their college counseling services that are designed to help students succeed in their educational and personal journeys. Some of these services include individual counseling, couples counseling, premarital counseling, group counseling, crisis intervention, and informational workshops.

“Students who seek our services will learn important skills to promote thriving, including how to care well for themselves, ways to foster community support, and practical tools to directly address their concerns,” Lacy said. “Staff are well trained in helping students pursue emotional, social, relational and academic wellness.”

Workshops and Other Resources

In addition to personalized counseling sessions, APU’s counseling center hosts workshops designed to help students through mental health challenges. These offerings include:

  • The Living Well Workshop: During these sessions, students have the chance to explore ways to reduce stress and learn strategies that can help improve their emotional well-being.
  • Anxiety Toolbox Workshop: This program helps students learn how to reduce anxiety. Students walk out of these sessions with their own personalized, written plan to better address their own anxiety.
  • Self-Growth Group: This offering is geared toward students who are interested in better understanding themselves (and others). During the sessions, participants are encouraged to explore their personal relational patterns and discover new ways to authentically connect with others.

The counseling center at APU recognizes that spiritual, relational, and emotional needs are often interconnected. Accordingly, the department strives to meet the needs of all three areas while working in tandem with other campus resources. These efforts include helping students connect to Spiritual Life, the Academic Success Center, and the Office of Women’s Development for additional support.

Lacy encourages all students to make an appointment to visit the University Counseling Center, located at the APU’s East Campus in Magnolia Court, next to the Health Center. “We offer same-day urgent care sessions, as well as one-time solution sessions, and intake appointments,” she noted.

Richard S. Martinez, EdD, executive director of the Center for Diversity, Equity, and Inclusive Excellence at APU, shared his own experience as a student of color. Growing up in the Inland Empire in the Rancho Cucamonga area, he wasn’t exposed to a Latino educator until he was in community college.

“I can still remember his name—Diego Vigil—he taught Chicano studies,” Martinez said. “I was enthralled, impressed, and motivated as a Latino male to have him as a role model. Up to that point, I didn’t know that it was even possible for someone who looked like me to be in an influential educator role. Modeling makes a difference. That was a turning point for me as a student.”

“It is our moral imperative as Christian educators to cultivate an organizational climate that openly values diversity as an asset, not a deficit,” Martinez said. “Diversity is not divisive. The diversity of our world was created by God. With that in mind as educators, we need to cultivate diverse perspectives in the classroom.”

A diverse education also prepares students for careers in the diverse world, Martinez added. “As Christian educators, teaching discernment and the local and global perspectives of the human experience becomes a vital element to equipping our students for life in a ‘glocal’ environment,” he said.

Working to Better Mirror the Community

The Azusa Pacific University community has long endeavored to reflect the community at large. While Martinez noted that the university has already made many strides toward this goal, he acknowledged that the university needs to continue to build a more diverse college faculty. “Various surveys and studies continue to show that our faculty and staff demographics do not reflect the community composition of Azusa and Southern California,” he said.

The Center for Diversity, Equity, and Inclusive Excellence at APU endeavors to change this. In addition to providing support to faculty and staff, the center fosters the development and facilitation of diversity initiatives—all in the pursuit of inclusive excellence. Through its initiatives, the center aims to advance social justice on campus by increasing access, opportunity, equity, diversity, and inclusivity in all aspects of university life.

Building a Diverse Team of Leaders

Growing a diverse group of educators necessitates a focus on full-time faculty. Laurie Schreiner, PhD, chair and professor of APU’s Department of Higher Education, conducted a student success analysis for Azusa Pacific. She noted in her research that, in the past seven years, the percentage of APU adjunct and part-time faculty who are persons of color has increased, from 23.7 percent to 35.6 percent.

Schreiner pointed out that students benefit by studying with more full-time faculty of color who can commit to more student interaction. Accordingly, full-time faculty are involved in academic decision-making and curriculum reform. She noted that a campus-wide sense of community helps all students see the world through new eyes.

“Creating a sense of community on campus is the single best way to help all students thrive,” Schreiner wrote.
